The Profitec Pro 800 combines heritage design with modern, precision engineering. Like driving a classic manual transmission roadster, we love how the hand-operated lever grouphead offers a more direct connection between a barista and their machine.
The Pro 800 offers an thrilling mix of old world espresso preparation and rational, minimalist design. It really can’t be understated: this is a fun machine. Our team was so excited to emulate the Italian baristas of yesteryear, manually pulling shot after shot in our lab. The huge 3.5L copper boiler paired with the hefty 17 pound grouphead offers great temperature consistency with very little recovery time. The boiler also produces plenty of high quality steam, making it easy to steam richly textured milk drinks back-to-back.
For us, the most compelling feature of the Pro 800 is its ability to do a true soft preinfusion. Once the lever is lowered, water moves freely from the boiler to the grouphead. Pressure is only applied when the lever is raised again releasing a spring loaded piston in the group. The resulting espressos tend to be softer, sweeter and more full-bodied.
As thrilled as we were using the Pro 800, we were equally excited by the elegance of the design. Like Profitec’s other machines, the internal components are cleanly and logically arranged for easy access and maintenance. Externally, the mirrored stainless steel and uncluttered front panel elevates shot-pulling to a truly refined experience. While the Pro 800 has a PID controlled boiler, the digital display is thoughtfully hidden behind the drip tray; this way, you won’t be distracted by blinking lights while you’re connecting with your coffee.
Due to the lever’s simple mechanics, almost no sound is produced when pulling shots. The only time you’ll hear the Pro 800 is when the boilers are being refilled from the water reservoir by a small vibratory pump. If the machine is plumbed-in, water line pressure will fill the boilers and the machine will always be whisper quiet.
It should be noted the Pro 800 is a tall machine; it measures nearly 29 inches from the tip of the lever to the feet. It might not be a good fit underneath cabinetry but looks beautiful on kitchen islands or open counter spaces.
